The iconic North Hobart wine bar formally known as Willing Bros has entered an exciting new era. The vibe is right, the service is swift and the food is immaculate.
Chef Ryan Dolan, delivers an inspired neo-bistro menu. Utilising his relationships with local growers and technique honed in French Michelin-starred kitchens.
The wine list highlights emerging Tasmanian talent and Lo-fi gems, alongside tried-and-true classics. With 15 wines by the glass and over 300 bottles to explore, there’s something to suit every taste.
Willing is led by owners Angie Nichols and Emma Davis, who took the reins in 2024. They also run neighbouring venue Raincheck Lounge and founded the award-winning cocktail bar Society – Salamanca in 2015.

Guest chef Travis Goodlet—of The Mulberry Group, and formerly behind the pass at institutions like Vue de Monde and Tipo 00—descends into the kitchen with our own culinary provocateur, Ryan Dolan.
Together, they conjure a darkly delicious menu: neo-bistro wine snacks, hand-cut pasta, and boundary-pushing flavour built on Tasmania’s finest offerings. This is food to awaken your senses and stir your shadows. A feast to unmake the ordinary.
